Chili Lime Cilantro Pasta Recipe

This is one of the kids’ new favorites. Anytime I find something all four of my kids will eat I consider it a success. It was inspired by another recipe I tried but ended up not having some of the ingredients for, and what I created pleased the kids so I’ve made it again. Another bonus is that it’s an inexpensive, meatless meal.

Chili Lime Cilantro Pasta

Serves 6

10-12 ounces of uncooked long pasta
1-2 tbsp extra virgin olive oil
6 cloves of garlic, minced
1 red chili pepper, seeds removed and minced
1 cup white cooking wine
1 cup chicken broth
8 scallions, whites and greens chopped
1 cup cilantro, chopped
1 lime
Salt

Cook pasta according to instructions. Drain and set aside.

Meanwhile, heat oil in large skillet over medium heat. Add garlic and chili pepper and cook until just barely tender, stirring frequently. Add wine and chicken broth and let simmer until reduced by about half.

Reduce heat to low and stir in scallions and cilantro. Squeeze one or both halves of fresh lime into sauce, then add salt to taste. Toss in cooked pasta.
