Breakfast for Dinner – A Little Twist

Breakfast for dinner is a huge hit in our house. Besides pizza, it may be the only meal that all four children will eat without complaining. Typically breakfast for dinner is a free-for-all – they can choose between cereal or waffles. This is no time for fancy pancakes, complicated stratas, or anything as labor-intensive as, say, scrambled eggs. No, if we’re having breakfast for dinner, it’s because we are just too time-crunched to do anything besides pour some Honey Nut Scooters into a bowl or throw some frozen waffles into the toaster.

I decided to class things up a bit this week after seeing the idea in a magazine. Still took minimal effort, but it was different and, most importantly, no one wrinkled their nose at it and said, “I’m not eating THAT.

Savory Waffle Sandwiches

Zachary was working late so it was just me and the kids. I first preheated the oven to 450 degrees, and toasted the waffles while that was warming up. Then took orders. For Jonah, just some butter, cheese and turkey. For Grant, an equally minimalistic Miracle Whip, turkey and cheese. Miles chose MW, mustard, tomato and turkey and Isla and I went with MW, mustard, red onion, tomato, turkey, cheese and pickles. Grant and Miles aren’t terribly fond of melted cheese, but for the other sandwiches I put them in the oven for about 8 minutes, just long enough for the cheese to melt and everything else to get hot.

Success! Fast, cheap and well-liked. The kids have already requested I make them again. No worries, kids, I am all over that.

  2. This looks very good! The waffle with its airiness and crunchiness must be a nice departure from the usual bread slices for a sandwich. 😉
